Strawberry Jello Salad

This one is great! I think it is better than the Strawberry Pretzel Salad in this book.

Ingredients

  • 2 3 ounce packages strawberry jello
  • 1 large can crushed pineapple, drained, reserve juice
  • 2 10 ounce packages frozen strawberries, thawed (The kind that is packed with sugar in like a freezer container, not the one that is a bag of frozen strawberries.)
  • 2 bananas mashed
  • 8 ounce cream cheese
  • 1 1/2 cups hot water
  • 1/2 cup pecans (optional)

Directions

  1. Mix water and jello. Use the amount above, not the amount called for on the box. Stir until dissolved.

  2. Add strawberries, bananas and pineapple (drain pineapple and save juice).

  3. Pour 2/3 of mixture into a 2 quart straight sided clear serving dish.

  4. Let set until firm. Keep the other half at room temp while this sets up.

  5. Mix the cream cheese with a little of the reserved pineapple juice. Thin to a thick gravy consistency.

  6. Spread on top of congealed jello.

  7. Let this layer set until firm.

  8. Mix 1/2 cup pecans with remainder of strawberry jello (optional) and pour over set layers.

  9. Chill 2 hours or overnight.
