Date Nut Pinwheel Cookies

Ingredients

  • 1/2 cup margarine
  • 1 cup brown sugar firmly packed
  • 1 egg slightly beaten
  • 1 teaspoon vanilla
  • 2 cups flour sifted
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

  • FILLING:
  • 1 8 ounce package dates chopped
  • 1/4 cup sugar
  • 1/2 cup water
  • 1/2 cup pecans finely chopped

Directions

  1. Cream together margarine, sugar, egg and vanilla.

  2. Combing dry ingredients and blend into creamed mixture.

  3. Chill dough overnight.

  4. FILLING: Combine dates, sugar and water in sauce pan.

  5. Cook over low heat until mixture is smooth, stirring occasionally.

  6. Remove from heat, add pecans.

  7. Divide chilled dough in half. (put half back in fridge)

  8. On lightly floured pastry cloth or waxed paper, roll each half into 12×6×1/4 inch rectangle.

  9. Spread date mixture over each rectangle.

  10. Beginning at long side of rectangle, roll up as for jelly roll.

  11. Chill over night.

  12. Working with one roll at a time, cut into 1/3 inch thick slices. Place on greased baking sheet.

  13. Bake at 350 degrees for 10 minutes.
