Spaghetti Squash & Orange Cake

Serves 8 people

Ingredients

  • 4 oz butter, room temperature
  • 1 cup sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger, ground
  • 2 eggs
  • 3 cups spaghetti squash, baked and shredded
  • 1/4 cup milk (or orange juice)
  • 2 cups flour, all purpose
  • 1 Tbsp baking powder

Directions

  1. Cream butter & sugar & salt. Add in vanilla, cinnamon, ginger, eggs, spaghetti squash. Mix well. Add in milk/orange juice. Add in flour & baking powder (adjust liquid to thick muffin batter consistency).

  2. Baking in oven 35-45min, 350degrees, in a 9 inch round cake pan.

  3. *Can be used for muffin batter.

  4. *Optional dried berries.
