Linda’s Quick ’n Easy Baked Beans

Yep, these are quick and easy…and I don’t even bake them…you can, but you don’t need to! When you taste these you will think you slaved all day over a hot oven!

Ingredients

  • 2-3 cans Van de Camp pork 'n beans, drained
  • 3 slices bacon cut into little pieces
  • 1/2 chopped onion
  • 1/4 cup ketchup
  • 1 teaspoon mustard
  • handful of brown sugar (however much you like)
  • finely diced jalapeno optional (from a jar, I use about 3-4 slices) I like to use 1/2 fresh jalapeno finely minced, REMOVE SEEDS.

Directions

  1. Drain off some of the excess juice from the cans of pork ’n beans. Place in an oven proof glass dish.

  2. In a small skillet cook bacon pieces until done but not real crispy. Remove from grease and add to beans.

  3. In the bacon grease saute onion until clear and tender. Add the bacon grease and onions to the beans.

  4. Add ketchup, mustard and brown sugar to beans.

  5. Add diced jalapeno if desired or just serve on the side.

  6. Combine all ingredients.

  7. Place in microwave, covered, for 3 minutes. Stir. Microwave 2 more minutes.

  8. Ready to serve.
