Linda’s Mashed Potatoes

OK…these are just mashed potatoes…but for some reason my family says no body else makes them as good.

Ingredients

  • 4-6 potatoes
  • water
  • salt to taste
  • pepper (optional...can be added at table)
  • 1 can evaporated milk
  • 1 stick margarine

Directions

  1. Peel and quarter potatoes…you can do as few or as many as you wish…this is just a guideline.

  2. Place in pan, cover with water. Add salt now. Probably about a scant teaspoon…I just sprinkle some in.

  3. Boil until potatoes are fork tender. Maybe about 20 minutes, depending upon size of pieces.

  4. Drain.

  5. Add 1 stick margarine to hot potatoes. Mash to very lumpy.

  6. Slowly add canned evaporated milk. It might take as little as 1/2 can or as much as a full can. Mash as you add milk.

  7. I kind of actually like my homemade mashed potatoes with a few pea size lumps left in them. I don’t add pepper, but whoever wants it will add at table.
