New Potatoes in Cream Sauce

Old Farm Recipe…and so good with farm fresh new potatoes!

Ingredients

  • Pan full of new potatoes, skin on
  • water
  • salt
  • 1 stick margarine
  • 2-3 heaping tablespoons flour
  • Milk as needed
  • 1 cup frozen peas (optional)
  • 1 tablespoon minced fresh parsley (optional)

Directions

  1. Scrub the new red skinned or white skinned new potatoes. Make sure all are similar in size or cut some if needed. DO NOT PEEL.

  2. Place in pan of salted water to cover. Bring to a boil. Simmer for about 20 minutes or until potatoes are fork tender.

  3. Optional…you can add 1 cup of frozen green peas towards the end of your cooking time.

  4. Drain in all liquid from potatoes.

  5. In the mean time in a small to medium skillet, melt the margarine. Add the flour, stir to incorporate.

  6. Add salt and pepper to rough. Add milk stirring as you add the milk. Bring to a boil, it will thicken.

  7. Pour cream sauce over boiled potatoes.

  8. Serve.
