Onion Roasted Potatoes

Recipe calls for regular peeled white potatoes. For a different look try using red skinned potatoes with skins on.

Ingredients

  • 1 envelope Lipton onion-mushroom soup mix
  • 1/2 cup olive oil
  • 1/4 cup margarine melted
  • 1 teaspoon thyme leaves (optional)
  • 1 teaspoon marjoram leaves (optional)
  • 1/4 teaspoon pepper
  • 2 pounds potatoes peeled and quartered
  • Sprinkle with minced parsley prior to serving.

Directions

  1. Preheat oven to 450 degrees.

  2. In a small bowl or large measuring cup combine all ingredients except potatoes.

  3. Prepare potatoes and place in shallow baking or roasting pan.

  4. Drizzle the above mixture over potatoes and stir around to coat thoroughly.

  5. Bake, stirring occasionally, 60 minutes or until potatoes are tender and golden brown. If potatoes seem to be drying out, add just a little hot water for steam and cover with foil during last half of cooking.
