Ketchup from Tomatoes

Ingredients

  • 7 quarts peeled, blended fresh tomatoes
  • 4 medium onions chopped
  • 6 cloves garlic chopped
  • 1/2 box pickling spices
  • 3 whole cinnamon sticks
  • 1 1/2 cups 90-100 grain vinegar
  • 1 1/2 cups sugar
  • 3 1/2 teaspoons pickling salt

Directions

  1. To peel tomatoes…dip into boiling water, cool to handle and skins will slip off.

  2. Place tomatoes in a blender along with the onions and garlic.

  3. Blend until you have 7 quarts total combined with the onions and garlic.

  4. Strain through cheese cloth to remove seeds.

  5. Tie pickling spices and cinnamon sticks into a spice bag or cheese cloth.

  6. mbine and simmer everything…spices, tomatoes with onion garlic, salt, sugar and vinegar into pot and simmer until it is reduced to 1/2.

  7. Pour into pint jars. Place lids and rings on tight.

  8. Process in hot water bath for 20 minutes from returning to boil.
