Czech Style German Potato Salad

Ingredients

  • 3 slices bacon, cut into small pieces
  • 1/2 onion, medium, diced
  • 1 small garlic clove minced
  • 1/4 cup sugar, or to taste
  • 1/2 cup apple cider vinegar, or to taste
  • RED potatoes as needed
  • salt and pepper to taste
  • 1-2 Tablespoons chopped parsley

  • NOTES: You can boil your potatoes in Broth made with Chicken Bouillon Cubes if you want. You can add 1 teaspoon minced dill instead of parsley. You can stir in one chopped hard boiled egg when completed if desired.

Directions

  1. Peel potatoes dice into 1 inch pieces.

  2. Place in boiling salted water. (or chicken broth)

  3. In the mean time sauté bacon, onion and garlic until bacon is crisp and onion is caramelized.

  4. Add vinegar and sugar, bring to a slow boil. I recommend adding less vinegar and sugar then adjusting to your tastes at the end. Remove from heat.

  5. When potatoes are fork tender drain water.

  6. Add the bacon grease, bacon, onion, vinegar sugar mixture.

  7. Stir well…kind of mushing potatoes.

  8. Stir in chopped parsley and boiled egg

  9. You may have to adjust amount of vinegar and sugar.
