Hungarian Cole Slaw

Ingredients

  • 4 cups shredded cabbage (enough to stuff into pint or quart jar)
  • 1 sweet white onion thinly sliced
  • 1 cup white vinegar
  • 1 1/2 cup sugar
  • 1 1/2 tablespoon salt
  • 3 cup water
  • -
  • Optional Items:
  • thinly sliced red Jalapeno pepper
  • chopped bell pepper
  • cucumber
  • any fresh sliced/chopped vegetable

Directions

  1. Toss cabbage and onions together.

  2. Press tightly into a clean quart jar.

  3. Combine vinegar, sugar, water and salt. Heat until sugar and salt are dissolved.

  4. Cool. TASTE! Adjust to your personal tastes. The amounts for the “juice” are very approximate. You may want to add more or less of the vinegar, sugar and water.

  5. Pour over cabbage and onions in jar.

  6. Put lid and ring on jar.

  7. Allow to sit in fridge at least over night.

  8. This will be enough for several meals…it will keep for about a month in the fridge…but it won’t last that long.
