Easy Butternut Squash

Ingredients

  • 1 medium butternut squash
  • salt
  • butter
  • light brown sugar
  • water

Directions

  1. First wash outside skin of squash.

  2. Cut squash in half length wise. Clean out seeds and strings if any.

  3. Place upside down in a microwave dish.

  4. Add about 1/2 inch water to dish and just a little salt to water.

  5. Cover with saran and vent by poking a couple holes in saran.

  6. Start by setting microwave to 8 minutes, check to see if done. Microwave more if needed. Remember it will continue to cook a little so be careful not to over-cook.

  7. Flip squash over and dot inside with butter and sprinkle with just a little brown sugar…not too much

  8. Place back in microwave and heat just until butter is melted.

  9. Serve, let each person scoop out their own.
