Peppermint Sugar Cookies

Ingredients

  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, room temp
  • 3/4 cup powdered sugar
  • 1 egg yolk
  • 2 egg whites
  • 1/2 teaspoon peppermint extract
  • 1/2 cup finely crushed hard peppermint candies
  • additional powdered sugar for rolling

Directions

  1. Mix together flour, baking powder and salt, set aside

  2. Beat butter and powdered sugar until light and fluffy.

  3. Add egg yolk and beat until blended.

  4. Add egg whites and extract and mix well.

  5. Gradually beat dry ingredients into butter mixture.

  6. Stir in peppermint candies.

  7. Gather dough into a ball, wrap in plastic and chill for about an hour.

  8. Pre-heat oven to 350 degrees. Spray nonstick spray on cookie sheet or use parchment paper.

  9. Form dough into 1 inch balls. Roll in powdered sugar, 2 inches apart. Flatten each cookie in criss-cross pattern with fork.

  10. Bake until golden on bottom, 10-12 minutes.
