Old Time Pea Salad

This is one of those recipes that you don’t really measure…just use as much or as little of suggested ingredients.

Ingredients

  • 2 cans LeSur Peas drained and rinsed
  • 1 large jar diced pimentos, drained
  • 1/2 sweet onion finely minced or 1/2 bunch green onions sliced
  • 2 ribs celery finely diced
  • 6 hard boiled eggs chopped
  • 3 tablespoons either dill or sweet relish
  • Salt & pepper to taste
  • 1 teaspoon mustard
  • Miracle Whip salad dressing to make creamy
  • Velveeta Cheese in small cubes or a colby cheese in small cubes

Directions

  1. NOTE: You can use 2 cups of frozen peas, lightly blanched and cooled.

  2. Combine peas, pimentos, onion, celery, boiled eggs, salt & pepper.

  3. Chill.

  4. Just before serving stir in small chunks of cheese, mustard and Miracle Whip, enough to make creamy.
