Eggplant Casserole

Very old Recipe I found in my mothers files. I remember eating it as a child and liking it. Tried it again recently and wasn’t a fan.

Ingredients

  • 1 medium eggplant
  • 1 medium onion chopped
  • 3/4 cup cracker crumbs crushed
  • 1 egg slightly beaten
  • 1/2 cup grated cheese

Directions

  1. Peel and dice eggplant. Soak in salted water for 3 to 4 hours or overnight in fridge. Drain and cook in saucepan with onion for 10 minutes.

  2. Drain vegetables and add 1/2 cup cracker crumbs, cheese and beaten egg.

  3. Pour into greased casserole, cover with 1/4 cup cracker crumbs and dot with butter.

  4. Bake 30 to 40 minutes in 350 degree oven.
