Bing Cherry Salad

Very old recipe found in my mothers files.
I remember her making this usually for company or Christmas.

Ingredients

  • 1 #2 can (2 1/2 cups) pitted Bing Cherries
  • 1 cup crushed pineapple
  • 2 packages cherry gelatin
  • 2 cups fruit juice (assume from the drained pineapple and cherries)
  • 2 cocoa-cola drinks (how many ounces were drinks back in 1950's...thinking about 2 cups coke)
  • 1 cup chopped nuts

Directions

  1. Drain juice from cherries and pineapple. Two cups of juice are needed, add a little water to make this amount if necessary. Bring to a boil and pour over gelatin stirring until completely dissolved.

  2. When cool add cola stir and chill (ok…maybe about a total of 2 cups coke?) in refrigerator until partly congealed.

  3. Add drained cherries, pineapple and nuts and pour into mold which has been rinsed in cold water.

  4. When firm unmold on salad greens and serve with mayonnaise. Or you can serve this with a light cream cheese dressing which is made by thinning down cream cheese with milk or cream.
