Black Bean Brownies

Ingredients

  • 1 can (13-15 oz) black beans, rinsed well
  • 4 eggs
  • 1 cup sugar substitute
  • 2 tbsp extra-virgin olive oil
  • 3 tbsp unsweetened cocoa
  • 1 tsp vanilla
  • 1 tsp baking powder
  • chopped nuts (optional)

Directions

  1. oven to 350.

  2. Spray an 8 × 8″ brownie pan with nonstick cooking spray. Blend all ingredients (except nuts) in a blender or food processor until smooth. Transfer the batter into a mixing bowl and fold in nuts (if desired). Then pour batter into prepared brownie pan.

  3. Bake ~30 mins until set in middle.
