Soft Breadsticks

Ingredients

  • 1 package (1/4 oz) active dry yeast
  • 1 c warm water
  • 3 Tbsp sugar
  • 1 tsp salt
  • 1/4 c vegetable oil
  • 3 c all-purpose flour, divided
  • cornmeal
  • 1 egg white
  • 1 Tbsp water
  • coarse salt, optional

Directions

  1. In a mixing bowl, dissolve yeast in water

  2. Add sugar, salt and oil; stir until dissolved

  3. Add 2 c flour; beat until smooth

  4. Add enough remaining flour to form a soft dough

  5. Turn onto a floured board; knead until smooth and elastic, about 6-8 minutes

  6. Place in a greased bowl, turning once to grease top

  7. Cover and let rise in a warm place until doubled, about 1 hr

  8. Punch dough down and divide into 12 portions

  9. Using your hands, roll each portion into a 10 × 1/2 in strip

  10. Place 1 in. apart on a greased baking sheet sprinkled with cornmeal

  11. Let rise, uncovered, until doubled, about 45-60 min

  12. Beat egg white and water; brush over breadsticks

  13. Sprinkle with coarse salt if desired

  14. Place baking sheet on middle rack of oven; place a large shallow pan filled with boiling water on lowest rack.

  15. Bake at 400 for 10 minutes

  16. Brush again with egg white

  17. Bake 5 minutes more or until golden brown
