Diamond white fudge

Ingredients

  • 2 c sugar
  • 1/2 sour cream
  • 1/3 c white corn syrup
  • 2 Tbsp butter
  • 1/4 tsp salt
  • 2 tsp vanilla
  • 1/4 c chopped candied cherries
  • 1 c broken walnuts

Directions

  1. Bring sugar, sour cream, corn syrup, butter and salt slowly to boiling, stirring until sugar dissolves

  2. Boil, without stirring, over medium heat, to 236 degrees (soft ball stage)

  3. Remove from heat

  4. Let stand 15 min without stirring

  5. Add vanilla and beat until mixture starts to lose gloss (about 8 min)

  6. Stir in cherries and nuts and quickly pour into greased pan

  7. Cool and cut into squares
