Raspberry Truffle Brownies

Ingredients

  • 1/2 c butter
  • 1 1/4 c semisweet chocolate chips
  • 2 eggs
  • 3/4 c packed brown sugar
  • 1 tsp instant coffee crystals
  • 3/4 c all-purpose flour
  • 1 c (6 oz) semisweet chocolate chips
  • 1 pkg (8 oz) cream cheese, softened
  • 1/4 c confectioners' sugar
  • 1/3 c seedless red raspberry jam
  • 1/4 c semisweet chocolate chips
  • 1 tsp shortening

Directions

  1. In heavy saucepan, melt butter and 1 1/4 c chocolate chips over low heat

  2. Cool slightly

  3. In a large bowl, beat eggs and brown sugar

  4. Dissolve coffee crystals in water; add to egg mixture with melted chocolate

  5. Mix well

  6. Combine baking powder and flour

  7. Stir into chocolate mixture

  8. Spread in a greased 9 in. square pan

  9. Bake at 350 for 30-35 min or until brownies test done

  10. Cool

  11. Melt 1 c chocolate chips; cool

  12. In a mixing bowl, beat cream cheese until fluffy

  13. Add confectioners sugar and jam to cream cheese

  14. Stir in melted chocolate

  15. Spread over cooled brownies

  16. Melt 1/4 c chocolate chips and shortening; drizzle over brownies & topping

  17. Chill before cutting; store in refrigerator
