Rhubarb Topping (for cheesecake or other dessert)

Ingredients

  • 3 c diced fresh or frozen rhubarb
  • 1 c sugar
  • 2 Tbsp plus 1/2 cup cold water, divided
  • 1 Tbsp cornstarch
  • red food coloring (optional)

Directions

  1. In a saucepan, combine rhubarb, sugar and 2 Tbsp water.

  2. Bring to a boil.

  3. Reduce heat; simmer until rhubarb is tender, about 10 min.

  4. Combine cornstarch and remaining water until smooth; stir into rhubarb mixture.

  5. Bring to a boil; cook and stir for 2 min or until thickened

  6. Add food coloring if desired

  7. Cover and refrigerate until cool

  8. Spoon over dessert
