Upside-Down Strawberry Shortcake

Ingredients

  • 1 c miniature marshmellows
  • 1 pkg (16 oz) frozen sweetened sliced strawberries, thawed
  • 1 pkg (3 oz) strawberry gelatin
  • 1/2 c shortening
  • 1 1/2 c sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 2 1/4 c all-purpose flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 c milk
  • fresh strawberries and whipped cream

Directions

  1. Sprinkle marchmellows evenly into a greased 13×9×2 in baking dish; set aside

  2. In a bowl, combine strawberries and gelatin powder; set aside

  3. In a mixing bowl, cream shortening and sugar

  4. Add the eggs, one at a time, beating well after each addition

  5. Beat in vanilla

  6. Combine flour, baking powder and salt; add to creamed mixture alternately with milk

  7. Pour batter over the marshmellows

  8. Spoon strawberry mixture evenly over batter

  9. Bake at 350 for 40-45 minutes or until a toothpick comes out clean

  10. Cool on a wire rack, cut into squares

  11. Garnish with strawberries and whipped cream
