Apple Custard Coffee Cake

Ingredients

  • 2 c biscuit/baking mix
  • 1 c sugar, divided
  • 3/4 c milk
  • 1 tsp vanilla extract
  • 1 c chopped pecans
  • 2 medium tart apples, peeled and chopped
  • 1 tsp ground cinnamon, divided
  • 3 eggs
  • 1 c whipping cream

Directions

  1. In a bowl, combine biscuit mix, 1/4 c sugar, milk, and vanilla; mix well

  2. Stir in pecans

  3. Pour into a greased 9 in square baking dish

  4. Toss apples with 1/4 c sugar and 1/2 tsp cinnamon

  5. Sprinkle over batter

  6. In a bowl, combine eggs, cream and remaining sugar

  7. Pour over the apples; sprinkle with remaining cinnamon

  8. Bake, uncovered at 350 for 40-45 min or until knife comes out clean

  9. Serve warm; Refrigerate leftovers
