Spinach Cheese Manicotti

Ingredients

  • 1 medium onion, finely chopped
  • 3 garlic cloves
  • 1 Tbsp vegetable oil
  • 1 1/2 c ricotta cheese
  • 1 c (4 oz) shredded mozzarella cheese, divided
  • 4 oz cream cheese, softened
  • 6 Tbsp grated Parmesan cheese, divided
  • 1 tsp Italian seasoning
  • 1/2 tsp pepper
  • 1 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry
  • 8 manicotti shells, cooked and drained
  • 1 jar (26 oz) spaghetti sauce

Directions

  1. In a small skillet, saute onion and garlic in oil for 3 min; set aside

  2. In a mixing bowl, combine the ricotta, 1/2 c mozzarella, cream cheese, 4 Tbsp Parmesan, Italian seasoning and pepper; beat until smooth

  3. Stir in onion mixture and spinach

  4. Spoon or pipe into the manicotti shells

  5. Pour half the speghetti into a 13×9×2 baking dish

  6. Arrange shells over sauce; top with remaining sauce

  7. Cover and bake at 350 for 25 min

  8. Uncover; sprinkle with remaining mozzarella and Parmesan

  9. Bake 5-10 min longer or until cheese is melted
