Triple-Onion Baked Potatoes

Ingredients

  • 4 large baking potatoes
  • 1 lb sliced bacon, diced
  • 1/2 c finely chopped red onion
  • 1/2 c finely chopped yellow onion
  • 1/2 c sour cream
  • 2 Tbsp milk
  • 1 c diced American cheese
  • 1/2 c shredded cheese
  • 4 green onions, finely sliced

Directions

  1. Bake potatoes at 400 for 1 our or until tender

  2. Meanwhile, in a large skillet, cook the bacon over medium heat until crisp; remove to paper towels

  3. Drain, reserving 1 Tbsp drippings

  4. In the drippings, saute red and yellow onions until tender; set aside

  5. When potatoes are cool enough to handle, cut in half lengthwise

  6. Scoop out pulp, leaving 1/8 in shell

  7. In a mixing bowl, beat the pulp, sour cream, and milk until creamy

  8. Stir in sauteed onions, American cheese, and 1 c of bacon

  9. Spoon into potato shells

  10. Place on a baking sheet

  11. Bake at 400 for 25 min

  12. Sprinkle with cheddar cheese, green onions and remaining bacon

  13. Bake 5-10 minutes longer or until cheese is melted
