Cornbread and Corn Casserole

I used to make something similar to this, but it wasn’t as rich sounding as this recipe.
Think I will try this.
Finally tried this recipe…It was Delicious!

Ingredients

  • 8 ounce box of Jiffy Corn Muffin mix
  • 1 cup sour cream
  • 2 eggs
  • 2 tablespoons sugar
  • 1/2 stick of margarine (1/4 cup)
  • 1 can of creamed corn

Directions

  1. Melt margarine in 8 1/2 inch round casserole.

  2. Mix everything else together and pour into dish. (I didn’t think it even needed the extra 2 tablespoons of sugar as the Jiffy Corn mix is really sweet.)

  3. Place on a pizza pan or cookie sheet in case it bubbles over. Bake for 40-45 minutes at 375 degrees. Top will crack and be golden brown. This took about 15 minutes longer in my oven to “set” and crack and get golden brown on top.
