Gourmet Egg Salad

Haven’t tried.
I have a regular egg salad recipe in this book…this one sounds very good also. I would consider serving in a pretty tomato.

Ingredients

  • 6 large eggs
  • 1/4 cup Hellmans mayo
  • 2 tablespoons minced red onion
  • 1 tablespoon fresh parsley finely chopped
  • 1/2 stalk celery finely chopped
  • 2 teaspoons Dijon mustard
  • 1 lemon juiced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. In a medium saucepan, over high heat, add eggs and cover with 1 inch of water. Bring to a boil. Remove pan from heat, cover and let sit for 10 minutes. Fill a medium bowl with 1 quart water and 1 tray of ice cubes. Transfer eggs to ice water and let sit for 5 minutes. Peel and dice eggs.

  2. In a medium bowl mix together all ingredients. Serve.
