Yellow Wax Beans

Love these. I have one recipe in here for creamed wax beans that are delicious…but you can just cook them. They are very tender and do not take long to cook. Their flavor is so mild that you primarily want to season with just a little salt, maybe some white pepper and butter. I would NOT recommend bacon/bacon grease or onion for these as it will over-power the beans.
Always use fresh…never canned. Be sure there are no “rust” spots on them…that indicates freshness, if you purchase them at the grocery…They do not keep as long as green beans.
I grow my own in the spring and freeze to use all year.

Ingredients

  • 1 bunch wax beans
  • water
  • butter
  • salt (pepper only if you wish)

Directions

  1. Wash the beans cutting off the tips only. Do not cut into pieces, leave whole.

  2. Place in sauce pan, add water to about half way up, maybe less.

  3. Add salt and 1/2 stick butter.

  4. Bring to a quick boil and just simmer until tender. Won’t take long.
