Grandma’s Harvard Beets

Haven’t tried, but was told these are good.
I don’t have a clue who Grandma is!!

Ingredients

  • 3/4 cup white sugar
  • 4 teaspoons cornstarch
  • 1/3 cup white vinegar
  • 1/3 cup water
  • 2 15 ounce cans sliced beets drained (see Note for using fresh beets)
  • 3 tablespoons butter
  • 1/4 teaspoon salt
  • dash pepper

Directions

  1. NOTE: If using fresh beets, peel and cook whole beets in water until tender. Remove from heat, drain, cool so you can slice them.

  2. In a sauce pan, combine the sugar, cornstarch, vinegar and water. Bring to a boil and cook for 5 minutes.

  3. Add the beets to the liquid and simmer for 30 minutes over low heat.

  4. Stir in butter, salt and pepper and remove from the heat.

  5. Serve warm or chilled.
