Gourmet Harvard Beets

  • 1 can sliced beets (see Note for using fresh beets)
  • 1/4 cup sugar
  • 1 1/2 teaspoons cornstarch
  • 2 tablespoons vinegar
  • 2 tablespoons orange juice
  • 1 tablespoon grated orange peel


  1. NOTE: If using fresh beets, peel, cook in boiling water until tender. Drain (RESERVING 2 TABLESPOONS JUICE). Cool so you can handle to slice them.

  2. If using canned…drain, reserving 2 tablespoons juice.

  3. Set beets and juice aside.

  4. In a sauce pan, combine sugar and cornstarch. Add vinegar, orange juice and beet juice; bring to a boil. Reduce heat and simmer for 3-4 minutes or until thickened.

  5. Add beets and orange peel, heat through.
