Jam Shortcakes

Serves 15 people

Ingredients

  • 145 g butter
  • 1 t vanilla essence
  • 1/2 C icing sugar
  • 1/2 C cornflour
  • 3/4 C flour
  • 4 T jam
  • frozen berries if desired
  • icing sugar to dust

Directions

  1. Soften butter until just melted.

  2. Mix in vanilla, icing sugar, cornflour and flour until just combined.

  3. Press 2 T of mixture into greased cup cake pans, to just fill pan.

  4. Make dent in top of mixture and place 1/2 t jam in dent.

  5. Top with frozen berry if using.

  6. Bake at 160oC approx 35-45 minutes, until cooked.

  7. Cool before removing from tins.
