Mexican Twist on Chili-Mac

A “Twist” on my “Chili-Mac Goulash” recipe in this book.

Ingredients

  • 1 pound ground beef
  • 1 large onion, chopped
  • 1 clove garlic minced
  • 4 cups water
  • 1 (15 1/2 ounce) can whole kernel corn, drained
  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 2 (1 1/2 ounce each) envelopes dry taco seasoning mix
  • 8 ounces spiral pasta

Directions

  1. NOTE: This recipe does not tell you if you need to add the required amount of water called for on the packages of taco seasoning mix. I assume you need to in order to have enough liquid to cook the pasta in.

  2. In a 6-quart soup pot or large skillet, over high heat, brown ground beef and onion 8 to 10 minutes, until no pink remains in beef and onion is tender. Add remaining ingredients except pasta; mix well.

  3. Bring to a boil, then stir in pasta. Reduce heat to low, cover, and simmer 15 to 18 minutes, or until pasta is tender.
