Mexican Quinoa with Fried Egg

Serves 2 people

Ingredients

  • 1 cup quinoa
  • 2 cups broth of choice
  • 4 cups packed romaine
  • 3-4 thinly sliced Roma tomatoes
  • Minced cilantro
  • 1/8 cup red onion
  • 2 cups spinach
  • 1 lime or lime juice
  • 1 or 2 eggs per plate
  • 2 avocados sliced

Directions

  1. Cook quinoa in broth

  2. Layer lettuce, tomatoes, cilantro, onion and spinach in that order

  3. After 5 min of cooling, spread quinoa over salad

  4. Let sit so spinach wilts a bit

  5. Add lime juice and shake

  6. Fry eggs over easy and place on salad

  7. Top with avocado and salt and pepper to taste
