Key Lime Cake

Had this at a book club meeting. The lady was kind enough to share…very good and impressive dessert. Especially liked the icing.

Ingredients

  • 1 lemon cake mix
  • 1 cup vegetable oil
  • 4 eggs
  • 1 package lime flavored gelatin mix
  • 3/4 cup orange juice
  • -
  • FROSTING:
  • 1/2 cup butter
  • 1 package cream cheese
  • 3 tablespoons fresh lime juice
  • 1 tablespoon orange juice
  • 4 cups confectioners sugar
  • zest from one lime
  • -
  • Garnish:
  • 1-2 kiwis sliced and placed around base of cake
  • 1-2 limes sliced and placed around base of cake

Directions

  1. Mix together all ingredients for the cake and divide among pans of choice and cook according to cake box directions. (my friend used two 8 or 9 inch cake pans)

  2. FROSTING: Mix together ingredients for frosting adding lemon and lime juice until it is light and fluffy. Fill and ice cake.

  3. Decorate with the sliced kiwis and limes…this was very pretty. She placed these around base of cake and added a little pile to the top center of the cake.
