Bacon & Onion Foil Packet Potatoes

(from cokerlj’s recipe box)

Made these with just the onion soup powder, salt, water and bacon grease…did not add extra onion and did not use the bacon. We did use the cheese and sour cream as a topping for serving. They were excellent.
Used the left overs for our breakfast tacos the next morning!

Ingredients

  • 1 packet onion soup powder
  • 10-12 baby red potatoes, thinly sliced, or as many as you need for servings
  • 12 slices of cooked and crumbled bacon, or desired amount
  • 1 small onion thinly sliced and diced
  • 1 cup cheese (optional)
  • Salt and pepper to taste
  • 3 tablespoons butter
  • 1-2 tablespoons water
  • Sour cream for serving (optional)

Directions

  1. Spray foil with cooking spray. Be sure to double layer your foil. Make 2 packets if needed for number of servings desired.

  2. Add potatoes, bacon, 1 packet onion soup powder and mix.

  3. Add salt and pepper to taste.

  4. Top with 1-2 tablespoons of butter. Add 1-2 tablespoons water.

  5. Wrap securely, being sure to leave air space for steam to build.

  6. Grill for 20 to 30 minutes. Or you can bake it in the oven, at 350° for about 35 minutes or till done. Let stand 10 minutes before serving. Serve in foil, topped with sour cream and cheese if desired.
