Dreamy Cream Scones

Ingredients

  • 2 cups (10 ounces) unbleached all-purpose flour, preferably a low-protein brand such as Gold Medal or Pillsbury
  • 1 tablespoon baking powder
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • 5 tablespoons frozen, unsalted butter, cut into 1/4-inch cubes
  • 1/2 cup dried cranberries, slightly chopped
  • 1/2 cup good quality choc chips
  • Zest of one orange
  • 1 cup heavy cream

Directions

  1. Adjust oven rack to middle position and heat oven to 375. (My oven is hot, so just under 350.)

  2. Place flour, baking powder, sugar and salt in large bowl or work bowl of food processor fitted with steel blade. Whisk together or pulse six times.

  3. Using food processor, remove cover and distribute butter evenly over dry ingredients. Cover and pulse 12 times, each pulse lasting 1 second. Add cranberries, choc chips and orange zest and pulse one more time just to mix. Transfer dough to large bowl.

  4. Stir in heavy cream with a rubber spatula or fork until dough begins to form, about 30 seconds.

  5. Transfer dough and all dry, floury bits to countertop and lightly handle dough just until it comes together into a rough ball, 5 to 10 seconds. Do not handle too much. Divide dough in half. Press one half into a round shape approx. 3/4 inch thick. Cut round into 6 pie shaped pieces. Place on cookie sheet. Repeat with second half of dough.

  6. At this point you can bake them, watching carefully, for about 15 minutes until lighly golden and not too brown on the bottom, manipulating the cookie sheet. If so, first brush the tops with heavy cream and sprinkle with granulated sugar.

  8. Freeze on a cookie sheet til solid and then put into plastic bags for future use.

  9. To bake, take directly from freezer and put on a cookie sheet. Brush just the tops with cream and sprinkle with sugar. Bake 30 min at 375 (350 in my oven until lightly golden on top. I bake them in the middle of the oven for 20 min or so and then transfer them to the top rack for the remaining time.

  10. Serve warm or at room temperature. Best eaten the same day.
