Pad Thai

Serves 3 people

Ingredients

  • 2 bunches green onion
  • 1 container of bean sprouts
  • vegetable oil
  • flat or thick Asian noodles of your choice (not thin rice noodles)
  • 1/2 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon rice vinegar
  • 2 tablespoons siracha
  • 1/4 cup brown sugar
  • 2-3 chicken breasts
  • 4 eggs
  • chopped cilantro
  • chopped peanuts
  • 4 cloves garlic

Directions

  1. Mix together soy sauce, lime juice, rice vinegar, brown sugar and siracha together and set aside

  2. Cut 2 bunches green onion into 2 inch spears and cut lengthwise and set aside

  3. Tear chicken into smallish pieces and brown with vegetable oil in a pan and set aside

  4. Scramble 4 eggs with a bit of salt and set aside

  5. Clean pan and heat vegetable oil, green onions, sprouts and garlic until soft

  6. Add chicken, sauce and noodles (if noodles are not already soft, make sure to soften them before this step)

  7. Stir fry together and add eggs last

  8. Garnish with cilantro and peanuts
