Mulligatawny Soup

Serves 4 people

Ingredients

  • 1 oz unsalted butter
  • 12 oz Mirepoix (50% onion, 25% carrot, 25% celery, chopped)
  • 2T Flour
  • 2t curry powder
  • 1 Qt chicken stock
  • 3.5 oz Chicken meat, cooked, diced
  • 1 oz green apple, diced
  • 1 oz mushroom, sliced
  • 4 fl oz Milk, warm
  • Salt & Pepper to taste
  • Fresh Chives (for garnish)

Directions

  1. In a saucepot, heat the butter over medium heat; add the mirepoix and sauté for 5 minutes.

  2. Add the flour and curry powder and cook to form a blond roux.

  3. Add the stock. Bring to a simmer and cook for 15 minutes.

  4. Add the chicken, apple and mushroom and cook for 15 more minutes.

  5. Finish with the milk and season with salt & white pepper. Garnish with fresh chives.
