Ingredients

  • 1 cup sugar
  • 1/2 vanilla bean
  • 3/4 cups Scotch
  • 1 pint milk
  • 1 pint whipping cream
  • 8 egg yolks

Directions

  1. Place sugar, vanilla bean and Scotch in large pot and cook until dark caramel color. Add milk and cream and bring to boil. Remove from heat. Let stand 30 minutes. Bring mixture again to boil and pour over egg yolks while whisking. Strain through fine mesh strainer into bowl. Whisk to release heat until cool. Chill.

  2. makes 2 quarts
