Boiled Okra

Ingredients

  • Small young okra pods (as many as you think your family will need)
  • 1 tablespoon bacon grease (butter or olive oil will work)
  • Salt to taste
  • 1/4 teaspoon white vinegar
  • water to cover

Directions

  1. Wash your small okra pods. Cut the top “cap” off…do not cut too far into the okra, if you cut right on the line between the pod and cap the pod will still have a “seal” and thus not make as much slime.

  2. Place in small sauce pan and cover with water. Salt. Add bacon grease.

  3. Add vinegar. The vinegar also helps keep the okra from making as much slime. Slime doesn’t bother my family so I normally don’t even use the vinegar.

  4. Bring to a boil. Simmer just until tender. Okra cooks very quickly and you don’t want to boil it apart. I usually start my okra first, bring to boil, cover, turn off heat and it will be just right by the time I finish cooking dinner…maybe turning heat on just before serving to make sure it is still warm.
