Sauteed White Beans

Haven’t tried.
I am not a fan of white beans but will make them for hubby. This would make the left over beans interesting.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1/2 white or yellow onion, finely chopped
  • Kosher salt
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 cup white wine
  • 1 1/2 cups cooked navy beans
  • 2 tablespoons chopped fresh oregano leaves (or 2 teaspoons dried)
  • Freshly ground black pepper

Directions

  1. In a small pan, over medium heat, add the oil. When the oil is hot add the onion with a pinch of salt and saute until soft, about 5 minutes.

  2. Add the garlic and cumin and cook until fragrant, about 2 minutes. Raise the heat and add the white wine.

  3. Cook until the wine has reduced by half. Stir in the beans and oregano and season with salt and pepper, to taste.

  4. Cook gently for 15 minutes. Transfer to a serving bowl and serve.
