Lemon Parmesan Crusted Salmon

Ingredients

  • Pkg of frozen salmon fillet (at least four fish)
  • 2 tablespoons butter or margarine, melted
  • 1/4 teaspoon salt
  • 3/4 cup crushed ritz crackers
  • 1/4 cup grated Parmesan cheese
  • Onion powder (to taste)
  • Lemon Juice (to taste)
  • Garlic powder (to taste)
  • Black Pepper (to taste)

Directions

  1. Heat oven to 375ºF. Spray shallow baking pan with cooking spray.

  2. Pat salmon dry with paper towel. Place salmon, skin side down, in pan; brush with 1 tablespoon of the butter. Sprinkle with lemon juice and then salt.

  3. Mix ritz crackers, cheese, black pepper, onion and garlic powder. Stir in remaining 1 tablespoon butter.
  4. Press bread crumb mixture evenly on salmon.
  5. Bake uncovered 15 to 25 minutes or until salmon flakes easily with fork. Serve immediately.
