Twice Baked Potatoes

Ingredients

  • 4 potatoes
  • 1/4 cup sour cream (or more)
  • 1 1/2 oz cream cheese (optional)
  • 1 stick margarine
  • salt and pepper, to taste
  • 1/4 to 1/8 teaspoon garlic salt (optional)

Directions

  1. Preheat oven to 400 degrees. Pierce skin of potatoes and wrap in foil.

  2. Bake for 1 hour and 20 minutes or until tender.

  3. Allow potatoes to cool just so you can handle. Scoop out insides and mash with potato masher adding listed ingredients to a nice creamy consistency.

  4. Stuff potatoes with mixture. Return to oven and bake an additional 15 to 25 minutes.

  5. Top with grated cheese, bake an additional 5 minutes to melt cheese.

  6. Serve with bacon bits and sliced green onions on the side.
