Elder Berry Syrup

Ingredients

  • 1/2 C dried Elder Berries or 1 C fresh or frozen
  • 1 cinnamon stick
  • 5 cloves
  • 1 T freshly grated ginger
  • 2 C h2o -distilled or filtered or mineral
  • 1 C raw local honey

Directions

  1. To a small saucepan add all the ingredients except honey.

  2. Cover and bring to boil. Reduce heat to simmer, partially covered, and reduce to 1/2, approx. 20 minutes.

  3. Strain concoction into a bowl. Stir in the honey and stir to combine/dissolve.

  4. Cool and store in a lidded glass container in the fridge for 2-3 weeks.

  5. Syrups don’t store long, so make in small batches.

  6. Dose: if sick, can take up to 1T/hr. or if preventive, 1T qid.
