Coconut Macaroons

Serves 30 people

Ingredients

  • 3 egg whites
  • 1 1/2 C castor sugar
  • 1/2 t vanilla or raspberry essence
  • 1 1/2 C dessicated coconut

Directions

  1. Beat egg whites until soft peaks form.

  2. Add castor sugar – 1/2 cup at a time, beating until glossy and sugar has dissolved.

  3. Fold through essence, and coconut – 1/2 cup at a time.

  4. Spoon onto paper lined tray, spoon size according to your tase.

  5. Bake at 180oC approx 15 minutes.

  6. Remove from paper immediately.

  7. Cool and store in airtight container.
