Lemon lime curd

Cook time: 15 minutes

Ingredients

  • 4 eggs
  • 1 cup sugar
  • 2 Tablespoons lime zest
  • 1/4 cup like juice
  • 1/4 cup lemon juice
  • Pinch of salt
  • 2 Tablespoons coconut cream (fat from the top of a can of coconut milk)
  • 2 T earth balance

Directions

  1. Combine all other than last two ingredients in saucepan over low-medium heat.

  2. Whisk until thickens and keeps the shape of the whisk when stirred. About 10-15 minutes.

  3. Take off of heat and stir in the rest of the ingredients.

  4. Strain over storage bowl and refrigerate until cool.

  5. Eat with a spoon.
