Coconut Macaroons (recipe 2)

Crispy outside with soft middle
Can be made with Gluten Free flour for those with gluten itolerance

Prep time: 10 minutes
Cook time: 15 minutes
Serves 30 people

Ingredients

  • 3 egg whites
  • 1 C castor sugar
  • 1/2 t vanilla essence (or essence of choice)
  • 2 T plain flour
  • 1 1/2 C coconut

Directions

  1. Beat egg whites to soft peaks.

  2. Add half cup of sugar and beat to stiff peaks.

  3. Stir in remaining sugar, along with essence, flour and coconut.

  4. Place heaped teaspoons of mixture on paper-lined baking tray. (I use small icecream scoop for this)

  5. Bake at 150oC approx 15 – 20 minutes, until lightly coloured.
