Old-Fashioned Ginger Biscuits

For variety, add some choc bits, toasted slivered almond or cranberries along with the crystallised ginger

Cook time: 12 minutes
Serves 30 people

Ingredients

  • 125 g butter, softened
  • 1 C sugar
  • 1 egg
  • 1 T golden syrup
  • 1 3/4 C flour
  • 1 t each: baking powder, baking soda
  • 2 t ground ginger
  • 50 g crystallised ginger, finely chopped

Directions

  1. Beat butter and sugar until pale and creamy.

  2. Add egg and golden syrup, mix well.

  3. Add sifted dry ingredients along with chopped ginger, and stir to combine.

  4. Roll teaspoons of mixture into small balls, place on paper-lined tray and flatten gently with fork.

  5. Bake 10 – 12 minutes at 180oC.
