Kiwi Choc Chip Biscuits

Variation on good old ‘Kiwi’ (NZ) Highlander condensed milk biscuits
Can also add some chopped crystallised ginger and/or dried cranberries for another variation

Prep time: 10 minutes
Cook time: 20 minutes
Serves 40 people

Ingredients

  • 225 g butter, softened
  • 1/2 C caster sugar
  • 1/4 can (100 g) Highlander sweetened condensed milk
  • 2 C + 2 T plain flour
  • 1 t baking powder
  • 1 C dark choc bits

Directions

  1. Cream butter and sugar until light and fluffy, add sweetened condensed milk.

  2. Sift over flour and baking powder, fold into creamed mixture along with the choc bits.

  3. Roll tablespoons of mixture into balls, place on paper-lined baking tray, flatten lightly with fork.

  4. Bake at 170oC approx 15 – 20 minutes, until light brown in colour.
