Ginger Christmas Biscuits

Makes a lovely Christmas gift for family or friends.

Ingredients

  • 250 g butter
  • 1 C caster sugar
  • 1/4 C golden syrup
  • 1 T liquid honey
  • 70 g packet flaked almonds
  • 1/2 t cinnamon
  • 3 t ground ginger
  • 1 t baking soda
  • 1 T water
  • 3 C flour
  • 1/2 C crystallised ginger, chopped (optional)
  • To decorate:
  • lightly beaten egg white
  • extra flaked almonds

Directions

  1. Place first seven ingredients into a saucepan, stir gently over a moderate heat until butter melts.

  2. Bring to boil, then remove from heat.

  3. Dissolve baking soda in the water, stir into the butter mixture.

  4. Sift flour into a large bowl, make a well in the centre and pour in the butter mixture, mixing with a wooden spoon into a stiff dough – adding chopped ginger with the flour if using.

  5. Wrap and refrigerate dough for 2 hours until firm, then knead dough lightly and either roll out to 0.5cm thickness, then cut with biscuit cutters – or roll into balls of your choice of size.

  6. Brush edges of biscuits with beaten egg white, decorate with almonds.

  7. Bake biscuits on paper-lined tray at 180oC approx 15 minutes, until nicely browned.

  8. Leave on tray for a few minutes, before transferring onto cooling rack – biscuits will crisp more as they cool.
