Rustic Focaccia Bread

Ingredients

  • 2 cups light spelt flour
  • 2 t. baking powder
  • 1/2 t. sea salt
  • 1 cup tepid water
  • 1 T. plus 1/2 t. extra-virgin olive oil, divided
  • 1 T. grated Parmesan cheese
  • 1 t. crushed dried rosemary
  • 1/2 t. garlic salt

Directions

  1. Preheat the oven to 425F. Lightly coat a 9×13 baking dish with vegetable oil or clarified butter, or line it with parchment paper.

  2. In a large bowl, whisk together the flour, baking powder, and salt. make a well in the center of the dry ingredients.

  3. In a s small bowl, combine the water and 1/2 t. of the oil. Stir intil well blended and pour the liquid into the dry ingredients. Mix quickly with a spoon until a sticky and elastic dough forms.

  4. Lightly coat your hand with oil. Place the dough on a floured surface and knead it until it forms a ball.

  5. Place the dough on the prepared baking sheet andspread it out with your fingers until it is about 1/2 inch thick.

  6. Rub the top and sides of the dough with the remaining T. of oil. Season it with the cheese, rosemary and garlic salt.

  7. Bake for 25 minutes, or until the bread is golden brown. Let bread cool for at least 5 minutes before transferring it to a cooling rack.
